Microgreens are vegetables and herbs grown from seeds and harvested at the seedling stage, when they have only developed their seed leaves and before their true leaves emerge. Although they are small, these plants deliver bold, intense flavor and an exceptionally high concentration of vitamins, minerals, and antioxidants. Many studies have found that, depending on the variety, microgreens can contain up to 40 times more nutrients than a fully grown plant.
